ABOUT NOÊMA
Food with meaning. Hospitality with intention.
Noêma is a chef-led dining concept rooted in contemporary Greek cooking, shaped by place, seasonality and a Nordic respect for ingredients and simplicity.
Our cooking begins in Greece — its regions, ingredients and traditions — and is interpreted through exceptional produce and the experiences that have shaped chef Panagiotis Lenakis.
Created in Norway, Noêma began with a simple belief: the most memorable food is never only about what is on the plate. It is also about the people, the place and the moments created around the table.
The Meaning Behind the Name
Noêma comes from the Greek word νόημα — the meaning, thought or intention behind something.
For us, that idea reaches beyond the food itself.
It is the reason an ingredient is chosen. The way a menu belongs to a season or a place. The care with which a table is prepared. The feeling of being welcomed. And the moments that remain after the plates have been cleared.
That is what we mean by thoughtful dining.
GREEK CULTURE. NORDIC PHILOSOPHY.
Two Places, One Point of View
Noêma grew from the meeting of two different ways of thinking about food.
Greece shaped our understanding of hospitality — generous tables, strong produce, food made to be shared and the belief that looking after a guest matters.
Norway brought another perspective: seasonality, restraint, respect for ingredients and the confidence to let simplicity speak.
Together, they shape the way we cook today — Greek at heart, contemporary in expression and always led by the ingredient.
Ingredients First
Quality produce and seasonality come before unnecessary complexity.
Hospitality Matters
Food and hospitality are inseparable. How people feel around the table matters as much as what is served on it.
Rooted, Not Restricted
Greek traditions provide the foundation, not a set of rules.
The People Behind Noêma
Noêma is built by a small team bringing together food, hospitality, operations and storytelling.
Different backgrounds and disciplines, one shared approach to how the brand should feel and what every Noêma experience should represent.

From Athens to Norway
Panagiotis Lenakis · Chef & Founder
Born and raised in Athens, Panagiotis began his career after studying culinary arts in Greece.
Over more than thirteen years, his work has taken him through kitchens across Greece, the UK, Italy, Hungary, Israel, Cyprus, Spain and Norway, including Michelin-starred Maaemo and Kontrast.
Those years shaped an approach that sits naturally between two worlds: the generosity and instinct of Mediterranean cooking, and the clarity, seasonality and restraint found in Nordic kitchens.
Noêma grew from that perspective — not as an attempt to recreate a restaurant inside someone’s home, but as a way to create thoughtful food and genuine hospitality around the places where people already live and gather.
“The meals I remember most are rarely the most complicated ones. They are the ones connected to a place, a person or a moment. That is what I want Noêma to create.”
— Panagiotis Lenakis
Thoughtful Dining, From Everyday Meals to Remarkable Evenings
Today, Noêma brings this philosophy into homes across Oslo and Stavanger through private dining and weekly meal preparation.
The format may change, but the idea remains the same: good ingredients, thoughtful cooking and genuine care for the people we cook for.
